Description
This recipe was a team effort with Gip Dammone of Salvo’s Pizzeria in Leeds (one of the UK’s top 5 pizzerias). Gip asked us to help him perfect a gluten-free, wheat-free pizza. The result tastes ‘just like mama used to make’.
To make 4 thin-crust pizza bases you’ll need:
300g of Isabel’s Pizza Base Mix (2 sachets)
200ml of cow’s or soya milk
3 Tbsp olive oil
1 large free-range egg, lightly whisked.
To make the bases vegan you’ll need:
300g of Isabel’s Pizza Base Mix (2 sachets)
200g of mashed potato or sweet potato or squash
1½ tsp of baking powder to the mix instead of the egg
300ml soya or almond milk
3 Tbsp olive oil.
Add herbs such as oregano or finely chopped wild garlic to the flour mix
for more flavour, optional, but nice.
Also Makes: flat breads, pierogi and wraps.

My wife is able to get pizza bases on prescription but they are awful and it was a pleasure to see my wife’s face in Salvos when she tasted yours.

I would just like to say that the pizza bases were brilliant. Since then my girlfriend (she of the wheat intolerance) ordered about 5 or 6 boxes, because we love them that much. We just wanted to say thank you on top of that as you put a couple of packets of Cheese breads in there too. Not only is this excellent in terms of customer relations and generally a lovely touch but they were also fab. We served them at a BBQ recently and they went down extremely well.

We’ve spent over a year developing a base that tastes like pizza should. We tried the mixes and frozen bases already on the market, but none came up to scratch. The solution turned out to be Isabel’s Brazilian bread know-how. Now we are able to offer gluten pizzas which we are really proud of and tastes like pizza should.

For people who are intolerant to wheat, this pizza mix is a gift from the gods. As an avid pizza fan I could hardly tell the difference between a normal one and Isabel’s pizza mix. And my Wife was in heaven when she had her first pizza for almost eight years.

Here at Fratellis quality of ingredients is essential and we tried numerous flour mixes to no avail, non came close to our standard flour mix. Then we were told about the Isabel’s Cuisine mix, Isabel was extremely helpful and the mix is truly amazing. We now are proud to offer all customers new and existing a fantastic alternative with our gluten free Pizza and the response has been nothing short of amazing.

Thin and Crispy Gluten Free Pizza – Yes really! Thanks to the new Pizza Base Mix from Isabel’s Cuisine. This mix was developed by Isabel Gordon in conjunction with Salvos Italian Restaurant in Leeds. We tried it for the first time last week, it was really easy to mix and what’s more it stayed in one piece when we rolled it out. You can then pop it straight in the oven, no need to leave it to rise, for about 20 mins then add your topping and cook for another 5 minutes. We added an egg, but if you have an allergy to eggs you can always use the Orgran Natural Egg Replacer. For our topping we used Meridian Organic Tomato and Herb Pasta Sauce, a few olives, sliced tomato and grated cheese. Of course if you wanted to spice things up a bit you could use the Chilli Sauce instead!
GF mummy! –
My daughter is 17 and diagnosed with coeliacs for only 15 months. This pizza base is the first ‘normal’ tasting GF food she has had. She said it was so much like normal pizza she totally forgot it was GF – in fact she even asked me to double check the box to confirm it was okay!! praise indeed!!!!

I met you in Penrith at the food fair where I purchased your pizza base. My husband has to have a gluten free diet. We’ve hunted for a good pizza base for a long time. Paul says your product is the best he’s tried and probably better than a ‘normal’ (wheat) pizza! Thank you Perhaps we can persuade a local shop to stock your products?

Dear Isabel, I’m inspired to write to say thank you for the best tasting gluten-free pizza base I have ever tasted! It has such a good texture and is chewy – just like it should be and like I remember it before being coeliac. What a treat and thanks again. When you follow a gluten-free diet you miss so many tastes, textures and flavours from before, good pizza is something I had trained myself not to expect to eat again…but now I am sure I will be trying out lots of different toppings. Getting variety into the diet is a problem so its good news when new products that are this good come onto the market.
