Description
This recipe was a team effort with Gip Dammone of Salvo’s Pizzeria in Leeds (one of the UK’s top 5 pizzerias). Gip asked us to help him perfect a gluten-free, wheat-free pizza. The result tastes ‘just like mama used to make’.
To make 4 thin-crust pizza bases you’ll need:
300g of Isabel’s Pizza Base Mix (2 sachets)
200ml of cow’s or soya milk
3 Tbsp olive oil
1 large free-range egg, lightly whisked.
To make the bases vegan you’ll need:
300g of Isabel’s Pizza Base Mix (2 sachets)
200g of mashed potato or sweet potato or squash
1½ tsp of baking powder to the mix instead of the egg
300ml soya or almond milk
3 Tbsp olive oil.
Add herbs such as oregano or finely chopped wild garlic to the flour mix
for more flavour, optional, but nice.
Also Makes: flat breads, pierogi and wraps.

Your products have been a real saviour for me. Unfortunately I am not only gluten free but have problems digesting yeast. Several years ago I finally found a pizza base that I can enjoy and have been a loyal customer ever since. I also use the base mixture ( cooked and frozen and cut into pieces) for a crusty sandwich. I was so pleased with my recent order from Isabel’s, it was packaged so well and included a free sample of cassava flour too, which I’m looking forward to trying.
I ordered various products, but as yet have only used the pizza base mix and the baking fix. I have used the pizza base many times before and have found it to be the best gluten and dairy free base yet! I use the mashed potato method and add Italian herbs to the mix too. However, I start the pizza off at 220 degrees C and cook for 7 mins, then turn and cook for a further 7 mins. Then put the topping on, turn oven down to 200 degrees C and cook for 12-15 mins. I also cook the base on a piece of grease proof paper which makes it easier to turn the pizza base over.
Another tip is to cook a batch of mash and divide up into appropriate size pieces for your pizza mix and freeze, so that you always have some ready.
I also used the baking fix today whilst making a sponge flan base and was extremely pleased with the results.
I’m looking forward to trying all the other products I bought!
